Chicken Thighs with Lime

Ingredients:
3 tablespoons olive oil; divided
1/4 cup lime juice
1/4 cup fresh cilantro; chopped, plus additional for garnish
4 cloves garlic; minced
2 tablespoons scallions; sliced, divided
2 teaspoons brown sugar
3/4 teaspoon ground cumin
8 chicken thighs; bone in, skin on; thawed*
2 teaspoons kosher salt
1 teaspoon black pepper
1 lime; sliced
Directions:
1. Preheat oven to 425°F.
2. In a medium mixing bowl, whisk together 2 tablespoons olive oil, lime juice, chopped cilantro, garlic, 1 tablespoon scallions, sugar and cumin. Add the chicken thighs to the marinade and toss until well coated. Cover and refrigerate for at least 15 minutes but not more than 30 minutes.
3. Heat the remaining one tablespoon of oil in a cast iron skillet over medium-high heat. Add in the thighs; reserve marinade. Sear the chicken, skin-side down, for 4 minutes on each side until golden and crispy.
4. Pour in the reserved marinade and carefully transfer the pan to the preheated oven and bake until the chicken is cooked through, about 15-20 minutes.
5. Garnish with scallions, cilantro and lime slices.
