Roasted Shrimp with Tomatoes and Basil Recipe

Allen Brothers giant black tiger shrimp maintain their buttery texture when roasted along side ripe juicy tomatoes. Serve with a soft goat cheese polenta, and garnish with fresh basil for a warming and tasty meal.

Ingredients

1 pound appox 3-4 per person, giant black tiger shrimp; thawed*.

2 tablespoons olive oil

2 cloves garlic; minced

2 cups cherry tomatoes; quartered

1 cup fresh basil

2 teaspoons kosher salt

1/2 teaspoon black pepper

Instructions

Directions:

1. Preheat oven to 400°F.

2. Add all ingredients to a large mixing bowl and toss gently until combined.

3. Turn out onto a rimmed baking sheet and spread into an even layer. Bake for about 12 minutes or until shrimp are opaque.
